Preheat your oven to 400°F. Place the salmon fillet on a wire rack set over a baking sheet. Pour cooking wine over the salmon, then pat it dry thoroughly with a paper towel. Season generously with salt, black pepper, and garlic powder.

Bake the seasoned salmon in the preheated oven for 15 minutes, or until cooked through and easily flaked.

While the salmon bakes, combine the cooked white rice and rice vinegar in a medium pot. Mix well to ensure the vinegar is evenly distributed.

Once the salmon is cooked, carefully remove it from the oven. Using a knife and fork, flake the salmon into a large mixing bowl. Add the cream cheese, mayonnaise, sriracha, and a drizzle of sesame oil to the flaked salmon. Mix thoroughly until all ingredients are well combined.

Spread the seasoned rice mixture evenly as the first layer in a glass baking dish. Crumble the nori sheets and scatter them over the rice layer.

Evenly spread the prepared salmon mixture over the crumbled nori layer. Return the baking dish to the 400°F oven and bake for an additional 10 minutes, or until heated through and slightly golden on top.

Remove the sushi bake from the oven. Garnish with chopped green onions, black sesame seeds, and a drizzle of yum yum sauce. Serve immediately, scooping portions and enjoying with extra seaweed if desired.
