In a bowl, combine the thinly sliced beef with 1 teaspoon light soy sauce, 1 teaspoon Shaoxing wine, 1 teaspoon cornflour, 1/2 teaspoon baking soda, 1 tablespoon water, 1/4 teaspoon white pepper, a pinch of sugar, and 1 teaspoon oil. Add the separated ho fun noodles to the same hot wok. Stir-fry them briefly. Then, add the bean sprouts, sliced onion, and Chinese chives or spring onions (cut into sticks). Continue to stir-fry for another 30-45 seconds until the vegetables are slightly softened.

Return the stir-fried beef to the wok with the noodles and vegetables. Pour the prepared sauce mixture over everything. Stir-fry for another minute, ensuring all ingredients are well combined and coated with the sauce.
