Cut the 500g chicken wings into two pieces each, separating the drumette from the flat. Make diagonal slits on each piece of chicken.

Place the cut chicken wings into a bowl. Add 1 tablespoon cooking wine, 1 teaspoon salt, 2 tablespoons light soy sauce, and 1 tablespoon oyster sauce. Mix thoroughly by hand to ensure all chicken pieces are coated.

Let the chicken wings marinate for 15 minutes.

While the chicken marinates, chop the garlic, ginger, and green onion. Have the 3 dried chilies ready.

Heat a wok or large pan over medium-high heat. Add 1 tablespoon cooking oil. Once hot, place the marinated chicken wings into the pan. Fry until both sides of the chicken are golden brown.

Add 100ml water to the pan with the chicken wings. Cover the pan and simmer for 8 minutes.

After 8 minutes, remove the chicken wings from the pan and set them aside.

In the same pan, add 1 tablespoon cooking oil (for stir-frying aromatics), 10g chopped garlic, 10g chopped ginger, 3 dried chilies, and 10g green onion. Stir-fry until the aromatics are fragrant.

Return the chicken wings to the pan with the aromatics. Add 1 tablespoon light soy sauce, 1 tablespoon oyster sauce, 1/2 teaspoon salt, 1/4 teaspoon sugar, and 1/2 teaspoon dark soy sauce. Stir-fry evenly to coat the chicken wings with the sauce.

Add 1 tablespoon starch water to the pan. Continue to stir-fry until the sauce thickens to your desired consistency.

Transfer the stir-fried chicken wings to a serving plate and serve immediately.
