Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly under cold running water, scrubbing off any dirt.

Carefully cut each sweet potato in half lengthwise. Place the cut halves on a baking sheet, cut-side up.

Drizzle the vegetable oil evenly over the cut surfaces of the sweet potatoes. This will help them caramelize beautifully during baking.

Bake the oiled sweet potato halves in the preheated oven for 45 minutes, or until they are very tender and the cut surfaces are nicely caramelized. A fork should easily pierce through the thickest part of the potato.
