Heat the olive oil in a large skillet or cast-iron pan over medium-high heat. Add the diced sweet potatoes and cook for 8-10 minutes, stirring occasionally, until they start to soften and brown.

Add the diced red onion and bell pepper to the skillet. Continue to cook for another 5-7 minutes, until the vegetables are tender-crisp.

Stir in the cubed Trader Joe's pre-cooked beef sirloin, Everything But The Bagel Seasoning, smoked paprika, salt, and black pepper. Cook for 3-5 minutes, stirring occasionally, until the beef is heated through and slightly browned.
