Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Sauté for 5-7 minutes, until the vegetables begin to soften.

Add the minced garlic and cook for another 1 minute until fragrant, being careful not to burn it.

Stir in the rinsed red lentils, vegetable broth, diced tomatoes (undrained), cumin, turmeric, dried thyme, bay leaf, salt, and black pepper. Bring the mixture to a boil.

Once boiling, reduce the heat to low, cover the pot, and simmer for 30-35 minutes, or until the lentils are tender and the soup has thickened. Stir occasionally to prevent sticking.

Remove the bay leaf before serving. Taste and adjust seasoning as needed.

Ladle the hot soup into bowls. Garnish with fresh chopped parsley and a squeeze of fresh lemon juice.
