Preheat your oven to 350°F.

Place 14 tablespoons of unsalted butter in an oven-safe bowl. Put the bowl into the oven while it preheats to allow the butter to melt about halfway.

Once the butter is partially melted, remove it from the oven and let it cool slightly.

In a stand mixer, combine the slightly cooled, partially melted butter with 1 cup of granulated sugar and 1/2 cup of light brown sugar.

Beat the butter and sugar mixture until it becomes light and fluffy.

Scrape down the sides of the mixing bowl to ensure all ingredients are incorporated.

Add 2 eggs to the mixture, one at a time, beating after each egg until fully incorporated.

Add 1 teaspoon of vanilla extract, 1 teaspoon of baking soda, and 1/2 teaspoon of salt to the mixture.

Gradually add 2 1/2 cups of flour to the mixer, mixing until just combined. Be careful not to overmix the flour.

Add 3 cups of chocolate chips to the dough and mix briefly until they are evenly distributed.

Use a large cookie scoop to portion the cookie dough onto a baking sheet. Do not roll the dough yourself.
