Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.

Place chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or a heavy pan, pound the chicken to an even 1/2 inch thickness. Pat the chicken dry with paper towels.

In a medium bowl, combine the olive oil, dried oregano, dried basil, dried thyme, minced garlic, red pepper flakes, salt, and black pepper. Mix well. Add the pounded chicken breasts to the bowl and toss to ensure they are evenly coated with the herb mixture.

Pour the crushed tomatoes into the prepared baking dish, spreading them evenly across the bottom. Arrange the seasoned chicken breasts over the layer of crushed tomatoes in a single layer.

Bake in the preheated oven for 20 minutes, or until the chicken is mostly cooked through.

Remove the baking dish from the oven. Evenly distribute the sliced or shredded fresh mozzarella cheese over the chicken breasts, then sprinkle with the grated Parmesan cheese.

Return the dish to the oven and continue baking for another 10 to 15 minutes, or until the cheese is melted, bubbly, and lightly golden, and the chicken is cooked through (internal temperature reaches 165°F).

Carefully remove the baking dish from the oven. Let the Herbed Chicken Mozzarella Bake rest for 5 minutes before serving. Garnish with fresh chopped parsley.
