Bring a pot of water to a rolling boil. Carefully lower the eggs into the boiling water and cook for exactly 6 1/2 minutes to achieve a perfect jammy center.

Immediately transfer the cooked eggs to an ice bath to stop the cooking process. Let them cool in the ice bath for at least 5 minutes.

Preheat your broiler to high. Line a baking sheet with parchment paper or foil for easy cleanup.

Lay the salmon fillet skin-side down on a cutting board. Using a sharp knife, score the flesh of the salmon in a 1-inch criss-cross pattern. Cut deep enough to penetrate the flesh but be careful not to cut all the way through the skin.

In a medium bowl, combine the Chosen Foods 100% Pure Avocado Oil, honey, soy sauce, juice of 1/2 lemon, and gochujang. Whisk them together until the glaze is well combined.

Place the scored salmon fillet onto the prepared baking sheet. Pour the prepared glaze generously over the salmon, ensuring it gets into all the cuts. Use a brush to spread the glaze evenly over the entire surface of the salmon.

Place the salmon under the preheated broiler and broil on high for 7–10 minutes, or until the salmon is caramelized and slightly charred on top. Keep a close eye on it to prevent burning.

While the salmon is broiling, prepare the chili mayo. In a separate small bowl, mix the Chosen Foods Classic Mayo with the heaping teaspoon of gochujang (or sriracha) until smooth and thoroughly combined.

To assemble the bowls, place a serving of cooked rice into each bowl.

Arrange sliced avocado and sliced cucumber on one side of the rice in each bowl.
Peel the cooled jammy eggs and slice them in half. Place the egg halves next to the other toppings in each bowl.

Once the salmon is cooked, carefully remove it from the oven. Using a spatula, transfer pieces of the crispy, honey and soy glazed salmon over the rice in each bowl.

Drizzle the prepared chili mayo generously over the salmon and other components of the bowl.

Garnish each bowl with chopped green onions. Serve immediately and enjoy!
