In a bowl, combine the 1 kg pork liempo (cut into cubes), 1 head crushed garlic, 1/2 cup vinegar, 1/4 cup patis (fish sauce), 1 tablespoon whole black peppercorn, and 2 bay leaves. Mix all ingredients thoroughly to ensure the pork is well coated.

Cover the bowl and refrigerate the marinated pork for 30 minutes.

Heat 2 tablespoons cooking oil in a pan over medium-high heat. Add the marinated pork to the hot pan and sear until it is browned on all sides.

Pour the remaining marinade from the bowl into the pan with the seared pork.

Add 1/2 cup water, 1 tablespoon salt, and 1 tablespoon sugar to the pan. Mix everything well.

Bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for 30 minutes, or until the pork becomes tender.

Carefully remove the tender pork from the pan. Continue to simmer the sauce in the pan over medium heat until it thickens and reduces to a desired consistency.

Return the cooked pork to the pan with the reduced sauce. Mix well to coat the pork. Serve hot.
