In a large bowl, combine the Italian breadcrumbs and milk. Let the mixture sit for 5 minutes to allow the breadcrumbs to absorb the milk.

After 5 minutes, add the ground beef, garlic powder, salt, black pepper, 1/4 cup grated Parmesan cheese, egg, and 1 tablespoon of finely chopped parsley to the bowl. Use your hands to thoroughly mix all the ingredients together until well combined.

Preheat your oven to 400°F. Line a large baking sheet with parchment paper.

Roll the meat mixture into balls, each about the size of a golf ball. Place the formed meatballs on the prepared baking sheet.

Bake the meatballs in the preheated oven for 20 minutes. After baking, broil the meatballs for 3 minutes to achieve brown and crispy tops. Keep an eye on them to prevent burning.

While the meatballs are baking, preheat your oven to 350°F for the final assembly. Slice your sub rolls in half lengthwise.

To one half of each sub roll, spread a few spoonfuls of marinara sauce. Layer mozzarella cheese over the marinara sauce.

Once the meatballs are ready, place a few cooked meatballs on top of the mozzarella cheese on each sub roll. Add another spoonful of marinara sauce over the meatballs.

Sprinkle additional grated Parmesan cheese and a dash of chopped parsley over the meatballs and sauce.

Place the assembled open-faced subs in the 350°F oven for 5 minutes, or until the cheese is melted and bubbly.
