Wash the whole oranges thoroughly. Place them in a medium saucepan and cover with cold water. Bring to a boil, then reduce heat and simmer for 1 1/2 hours, or until very tender. Drain the oranges and let them cool completely.

Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan with butter and line the bottom with parchment paper. Lightly dust the pan with almond flour, tapping out any excess.

Once the oranges are cool enough to handle, cut them in half and remove any seeds. Place the entire cooked oranges (peel and pulp) into a food processor and blend until a smooth puree forms. This may take a few minutes.

In a large bowl, whisk together the almond flour, granulated sugar, baking powder, ground cinnamon, ground ginger, and salt.

In a separate bowl, lightly beat the eggs. Add the orange puree to the beaten eggs and mix well.

Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.

Pour the batter into the prepared cake pan and smooth the top. Bake for 40-45 minutes, or until a wooden skewer inserted into the center comes out clean.

While the cake is baking, prepare the orange syrup (if using). In a small saucepan, combine the fresh orange juice and granulated sugar. Bring to a simmer over medium heat, stirring until the sugar dissolves. Let it simmer gently for 2-3 minutes until slightly thickened. Remove from heat.

Once the cake is out of the oven, let it cool in the pan for 10 minutes. If using the syrup, poke holes all over the top of the warm cake with a skewer and pour the orange syrup evenly over the cake. This will keep the cake moist and add extra flavor.

Invert the cake onto a wire rack and remove the parchment paper. Let it cool completely before dusting with powdered sugar and garnishing with candied orange peel, if desired.
