Place the chicken wingettes in a bowl and cover completely with milk. Let them soak for 30 minutes. After soaking, drain the milk, rinse the chicken thoroughly under cold water, and pat dry with paper towels.

Transfer the dried chicken to an air fryer basket or a large mixing bowl. Add the salt, black pepper, garlic powder, onion powder, 1 1/2 teaspoons of mirin, 1 1/2 teaspoons of neutral oil, and 1 teaspoon of chicken bouillon powder. Toss until the chicken is evenly coated. Cover the chicken and refrigerate for at least 30 minutes to marinate.

While the chicken is marinating, prepare the yangnyeom sauce. In a small saucepan, combine the ketchup, sriracha, water, honey, minced garlic, sugar, 1 1/2 teaspoons of mirin, soy sauce, gochujang, gochugaru, and 1/4 teaspoon of chicken bouillon powder. Bring the mixture to a vigorous simmer over medium-high heat.

Reduce the heat to medium and continue to cook, stirring constantly, until the sauce has slightly thickened, which should take about 3 minutes. Remove the saucepan from the heat and allow the sauce to cool.

Preheat your air fryer to 400°F. Arrange the marinated chicken wingettes in a single layer on the crisper plate in the air fryer basket, ensuring not to overcrowd it. You may need to cook in batches.

Air fry the chicken at 400°F for 15 minutes. After 9 minutes of cooking, open the air fryer and use tongs to flip the chicken pieces to ensure even crisping.

Once cooked, remove the chicken from the air fryer. Serve immediately with the prepared yangnyeom sauce on the side for dipping.
