Preheat the oven to 400°F.

Pat dry the 4 chicken quarters thoroughly with paper towels. This helps achieve crispy skin.

In a large bowl, combine the chicken quarters with 1 tablespoon of olive oil, 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of paprika, 1/2 teaspoon of garlic powder, and 1/2 teaspoon of onion powder. Toss until the chicken is evenly coated with the seasonings.

Place the seasoned chicken quarters on one side of a large sheet pan, ensuring they are not overcrowded to promote even cooking and crisping.

Slice the 2 bell peppers (using mixed colors), 1 zucchini, and 1 red onion.

In the same bowl used for the chicken (no need to wash it), add the sliced vegetables. Drizzle with 1 tablespoon of olive oil, then season with 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/2 teaspoon of dried oregano. Toss until the vegetables are well coated.

Arrange the seasoned vegetables on the other side of the sheet pan, next to the chicken, spreading them out in a single layer.

Place the halved lemon wedges directly on the sheet pan with the chicken and vegetables. These will roast and add a bright flavor.

Bake for 35-40 minutes, or until the chicken is cooked through and the skin is crispy, and the vegetables are tender. Ensure the internal temperature of the chicken reaches 165°F using a meat thermometer.

Garnish the finished dish with fresh parsley before serving. Squeeze the roasted lemon over the chicken and vegetables for an extra burst of flavor.
