Preheat your grill to medium-high heat (around 375-400°F). If using a pellet grill or smoker, set it to a similar temperature for grilling.

Lay out individual strips of bacon on a clean cutting board or work surface. For each pinwheel, you will use 3 slices of bacon, slightly overlapping them lengthwise to create a wider surface.

Divide the ground beef into 4 equal portions. Take one portion and evenly spread a thin layer of ground meat over the entire surface of the three overlapping bacon strips, leaving a small border on one of the short ends.

Starting from the short end opposite the border, carefully roll each meat-covered bacon strip tightly into a pinwheel shape. Repeat this process for the remaining bacon and ground beef portions.

Once rolled, gently press the pinwheels to help them maintain their shape. Generously season the exterior of each bacon pinwheel with the burger seasoning, ensuring all sides are covered.

Carefully place the seasoned bacon pinwheels onto the preheated grill. Cook for 10-12 minutes per side, or until the internal temperature reaches 160°F, the bacon is crispy, and the meat is cooked through. You may need to adjust cooking time based on your grill and desired crispiness.

While the pinwheels are cooking, lightly toast the burger buns on the grill for 1-2 minutes, if desired.

Once cooked, carefully remove the bacon pinwheels from the grill using a spatula and let them rest for 2-3 minutes.

Place each cooked bacon pinwheel onto the bottom half of a burger bun. On the top half of the burger bun, apply ketchup and mustard in your desired pattern.

Assemble the burger by placing the top bun onto the bacon pinwheel. Garnish with fresh chopped parsley, if using, and serve immediately.
