Slice 1 kg of pork belly or liempo into 1/2-inch thick strips. Then, cut these strips into smaller, bite-sized pieces, approximately 2-3 inches long, maintaining the 1/2-inch thickness. Place all the cut pork into a large bowl.

To the bowl with the pork, add 1/2 cup banana ketchup, 1/2 cup soy sauce, 1/4 cup cane or white vinegar, 1/4 cup brown sugar, 2 tablespoons calamansi juice (or lemon/lime juice), 2 tablespoons minced garlic, 1 tablespoon salt, 1 teaspoon black pepper, and 1/2 teaspoon paprika.

Mix all the ingredients thoroughly by hand until the pork pieces are well-coated. Cover the bowl with plastic wrap and refrigerate. Marinate the pork for at least 4 hours, or preferably overnight, to allow the flavors to meld.

Once the pork is marinated, remove it from the refrigerator. Thread the marinated pork pieces onto skewers. Arrange the pork in a wavy pattern, ensuring the pieces are somewhat flat against each other on the skewer.

In a separate small bowl, combine 1/4 cup of the reserved marinade (taken from the main marinade mixture) with 1 tablespoon of cooking oil. This mixture will be used for basting while grilling.

Preheat a grill to medium-high heat. Place the skewered pork on the hot grill. Grill for 15-20 minutes, turning the skewers every 3-5 minutes to ensure even cooking and to prevent the pork from burning. While grilling, frequently baste the pork with the prepared basting sauce using a brush. Continue grilling and basting until the pork is cooked through, tender, and has developed a nice char on the outside.
