Pat dry the 2 chicken thighs. Rub them thoroughly with 2 teaspoons of sesame oil and 1/4 teaspoon of salt.

Add 2 cups of jasmine rice to your rice cooker pot. Then add the 6 minced garlic cloves, 1/2 inch of minced ginger, and 3 chopped green onions to the rice.

Pour in 2 cups of chicken broth, 1 teaspoon of chicken bouillon powder, and 1/2 teaspoon of turmeric powder into the rice mixture in the rice cooker. Stir gently to combine.

Place the seasoned chicken thighs on top of the rice mixture in the rice cooker. Close the lid and cook using the white rice setting.

While the rice is cooking, prepare the Ginger Scallion Oil. Finely mince 1/2 inch of ginger and 1 green onion.

In a heatproof bowl, combine the minced ginger, minced green onion, 1 teaspoon of sesame oil, and 1 gram of salt.

Heat 2 tablespoons of neutral oil in a small pan until it is shimmering hot. Carefully pour the hot oil over the ginger and green onion mixture in the bowl and stir immediately.

Prepare the Chili Garlic Sauce. Finely mince 6 cloves of garlic and 1/2 inch of ginger.

In a separate bowl, combine the minced garlic and ginger with 2 tablespoons of sriracha, 2 tablespoons of sambal, 1 tablespoon of chicken broth, 1 teaspoon of lime juice, and 2 teaspoons of sugar. Stir until all ingredients are well combined.

Once the rice cooker finishes cooking, open the lid. Carefully remove the cooked chicken thighs and set them aside. Fluff the ginger garlic rice with a fork.

Slice the cooked chicken thighs into your desired pieces.

Serve the ginger garlic rice on a plate, topped with the sliced chicken. Garnish with sliced cucumber, fresh cilantro, and additional chopped green onion.

Drizzle the prepared ginger scallion oil and chili garlic sauce over the chicken and rice before serving.
