Place the raw ham joint in a large pot. Arrange the halved onion, chopped celery, chopped carrots, fresh thyme sprigs, smashed garlic cloves, halved red pepper, bay leaves, cinnamon stick, and allspice berries around the ham.

Pour in the entire can of Old Jamaica Ginger Beer, then add enough additional water or stock to fully submerge the ham.

Bring the pot to a boil over high heat, then reduce the heat to low, cover, and simmer for 2 hours. This slow cooking process will make the ham very succulent and juicy.

After 2 hours, carefully remove the cooked ham from the pot and set aside. Strain the cooking liquid into a clean saucepan, discarding all the solids (vegetables, herbs, and spices).

To the strained liquid, add the brown sugar and maple syrup. Cook this mixture over medium heat, stirring occasionally, until it has reduced by half and achieved a thick, syrupy consistency, forming the glaze. This will take approximately 20-30 minutes.

Preheat your oven to 350°F. Place the cooked ham in a baking dish, optionally lined with parchment paper for easier cleanup.

Pour the prepared thick glaze generously over the ham.

Place the ham in the preheated oven and bake for approximately 30 to 35 minutes, basting the ham with the glaze every couple of minutes to build up a rich, caramelized coating.

Once the ham is beautifully glazed and caramelized, remove it from the oven. Allow it to cool and rest for about 30 minutes before slicing and serving.
