In a medium bowl, combine the crumbled feta cheese, egg, and shredded mozzarella cheese. Mix thoroughly with a fork until all ingredients are well incorporated and form a cohesive filling. Set aside.

Pour about 1/2 cup of water into a shallow, flat plate or pie dish. Working with one rice paper wrapper at a time, briefly dip it into the water for 10-15 seconds until it becomes pliable and soft. Do not over-soak, as they can become too sticky.

Lay three softened rice paper wrappers on a clean work surface (such as a cutting board or a piece of parchment paper), overlapping them slightly by about 1/2 inch to create a larger, continuous base. Repeat this process to create three sets of overlapped wrappers.

Spoon one-third of the prepared cheese mixture in a line along one long edge of the overlapped rice papers, leaving about 1 inch of space from the edge. Carefully roll the rice papers tightly around the filling to form a long, cylindrical log. Repeat with the remaining two sets of wrappers and filling.

Take one of the rolled logs and carefully coil it into a spiral or "snail" shape. Place it in the center of your air fryer basket. Take the second log and coil it around the first spiral, attaching it gently. Repeat with the third log, forming a single large spiral pie.

Brush the entire surface of the coiled pie with olive oil (or an egg wash if preferred) to help with browning and crispiness. Generously sprinkle sesame seeds over the top of the pie.

Place the pie into the air fryer basket. Air fry at 375°F for 12-15 minutes, or until the pie is golden brown and crispy. Cooking time may vary slightly depending on your air fryer model. Serve warm.
