Bring a pot of water to a boil. Carefully pour the boiling water over the 6 eggs, ensuring they are completely submerged. Let them sit in the hot water for about 1 minute.

After 1 minute, reduce the heat to low so the water is no longer boiling violently. Carefully crack each egg from step 1 directly into the hot water.

Cover the pot with a lid and let the eggs poach for 2–3 minutes. For a runny yolk, cook for 2 minutes. For a soft-set yolk, cook for 3 minutes. Adjust the time to your preference.

While the eggs are poaching, prepare the garlic yogurt. In a bowl, combine the 5 large spoonfuls of thick, strained yogurt. Grate the 1 clove of garlic into the yogurt mixture.

Add lemon juice, salt, and black pepper to the yogurt mixture according to your taste. Mix everything well until combined.

In a separate small pan, melt the 2 large spoonfuls of butter with a splash of olive oil over medium heat.

Once the butter is melted and slightly fragrant, stir in the chili flakes (or Korean chili powder), crushed red pepper flakes (peperoncino), and a pinch of salt. Cook for about 30 seconds until fragrant.

Carefully remove the cooked poached eggs from the water using a slotted spoon.

To assemble, spread the prepared garlic yogurt mixture onto a serving plate.

Carefully place the poached eggs on top of the yogurt.

Drizzle the warm spiced butter sauce generously over the eggs and yogurt.

Garnish with chopped chives (or dill/parsley). Serve immediately with toasted bread on the side.
