Thinly slice the 1 1/2 pounds of sirloin steak. Place the sliced steak into a bowl. Add the 1/2 teaspoon of baking soda, 2 tablespoons of soy sauce, 2 tablespoons of oyster sauce, and 1/2 teaspoon of pepper to the steak. Mix all the ingredients together thoroughly with the steak until well coated. Set the marinated steak aside.

Prepare the vegetables: Slice the small/medium yellow onion into half-moon pieces. Finely mince the 3 cloves of garlic. Chop the 1 bunch of green onions into approximately 1-2 inch pieces. Chop the head of baby bok choy, separating the white stems from the green leaves and chopping them into bite-sized pieces. The 2/3 cup of shredded carrot is pre-shredded and does not require chopping.

Prepare the sauce: In a measuring cup or small bowl, combine the 1/4 cup of soy sauce, 2 tablespoons of dark soy sauce, 2 tablespoons of brown sugar, 2 tablespoons of oyster sauce, 2 tablespoons of rice vinegar, 2 teaspoons of sesame oil, and 1/2 teaspoon of pepper. Whisk the sauce ingredients together until they are well combined.

Prepare the noodles: Separate the 28 ounces of fresh udon noodles according to the instructions on their packaging.
Cook the steak: Heat 2 tablespoons of neutral oil in a large pan or cast iron skillet over medium-high heat. Add the marinated sirloin steak to the hot pan. Let the steak sear for a few minutes without disturbing it to develop a crust. Stir the steak, then let it sear for a few more minutes until cooked through. Once cooked, remove the steak from the pan and set it aside.

Cook the vegetables and noodles: In the same pan (or a clean pan if preferred) over medium heat, add a bit more neutral oil if needed. Add the chopped yellow onions to the pan. Cook the onions for about 3 minutes, stirring occasionally, until they are slightly softened but still fairly stiff. Add the minced garlic to the pan and stir for 30 seconds until fragrant. Then, add the shredded carrots and chopped baby bok choy to the pan. Cook for another few minutes, stirring occasionally.

Add the noodles and sauce: Add the separated udon noodles and the prepared sauce to the pan with the vegetables. Give it a good stir to coat everything evenly and heat the noodles through.

Combine and finish: Add the cooked sirloin steak and the chopped green onions to the pan with the noodles and vegetables. Stir everything together until well combined and heated through. Serve immediately.
