Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a medium bowl, stir together the peanut butter, sugar, and egg until the dough is smooth and well combined.

Scoop about 1 tablespoon of dough and roll into a ball. Place balls 2 inches apart on the baking sheet. Use the tines of a fork to press a crisscross pattern into the top of each ball, flattening them slightly. If you like jelly with your peanut butter cookies - after scooping the dough, press it down and make a well in the center and add a teaspoon of jelly.

Bake for 8–10 minutes (or up to 12 minutes for a crisper edge) until the edges are just set and lightly golden. Let the cookies rest for 10 minutes. Serve and Devour!
