Prepare the honey-garlic sauce: In a small bowl, whisk together the honey, soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger. In a separate very small bowl, whisk together the cornstarch and 2 tablespoons of water to create a slurry. Set both aside.

Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of olive oil. Once hot, add the broccoli florets and stir-fry for 3-5 minutes, until tender-crisp. Remove the broccoli from the skillet and set aside.

Add the shrimp to the same skillet. Cook for 2-3 minutes per side, or until pink and opaque. Do not overcrowd the pan; cook in batches if necessary.

Return the cooked broccoli to the skillet with the shrimp. Give the honey-garlic sauce a quick whisk, then pour it over the shrimp and broccoli. Stir well to coat.
