Add ground beef to a large skillet or pan over medium-high heat. Sauté, breaking up the meat with a spoon, for 2 to 3 minutes until browned.

Add the chopped yellow onion and the white parts of the green onions to the pan with the beef. Continue to sauté for another 2 to 3 minutes until the onions are softened.

While the beef and onions are cooking, prepare the sauce. In a small bowl or glass measuring cup, combine the soy sauce, dark soy sauce, oyster sauce, granulated sugar (or sweetener of choice), white pepper, water, and cornstarch. Whisk until the cornstarch is fully dissolved and the sauce is well combined.

Create three small wells in the beef and onion mixture in the pan. Crack one egg into each well.

Drizzle the prepared sauce evenly over the beef and eggs in the pan.

Cover the pan with a lid and cook for another 2 to 3 minutes, or until the eggs are set to your desired doneness and the sauce has thickened slightly.

Remove the lid. Garnish the dish with the green parts of the green onions and the chopped red chili.

Serve the beef and egg mixture immediately over hot cooked rice.
