Preheat your oven to 350°F (175°C).

Melt 2 tablespoons (30g) of unsalted butter and pour it evenly into the bottom of the 9-inch (23cm) round cake pan.

Sprinkle 1/4 cup (50g) of light brown sugar evenly over the melted butter in the pan.

Arrange the sliced 1/4 inch (0.6 cm) banana rounds in a single layer over the brown sugar mixture at the bottom of the pan. Overlapping slightly is acceptable. Set aside.

In a medium bowl, whisk together 1 1/2 cups (180g) of all-purpose flour, 1 teaspoon of baking soda, 1/2 teaspoon of salt, 1/2 teaspoon of ground cinnamon, and 1/4 teaspoon of ground nutmeg until well combined.

In a large bowl, whisk together 2 large eggs, 1/2 cup (100g) of granulated sugar, 1/4 cup (60ml) of vegetable oil, 1/4 cup (60ml) of milk, and 1 teaspoon of vanilla extract until smooth.

Fold in the 3 mashed very ripe bananas (approximately 1 cup / 240g) into the wet ingredients until just combined.

Gradually add the dry ingredient mixture to the wet ingredient mixture, mixing until just combined. Be careful not to overmix; a few lumps are fine.

Carefully pour the banana bread batter over the arranged banana slices in the prepared pan, spreading it gently to ensure an even layer.

Bake for 50-60 minutes, or until a wooden skewer inserted into the center of the bread comes out clean.

Let the banana bread cool in the pan for 10-15 minutes on a wire rack. This allows the caramelized topping to set slightly.

Place a serving plate upside down over the cake pan. Carefully, but confidently, flip the pan and plate together to invert the banana bread onto the plate. Gently lift the pan off, revealing the caramelized banana topping.

Allow to cool slightly further before slicing and serving.
