In a medium bowl or Pyrex measuring cup, combine the soy sauce, hoisin sauce, honey (or maltose), freshly grated ginger, and five-spice powder. Add a few drops of red food coloring.

Stir the marinade mixture thoroughly with a small whisk until all ingredients are well combined and the color is uniform.

Place the pork shoulder strips into a large mixing bowl. Pour the prepared marinade over the pork.

Cook the pork for 20-25 minutes, flipping and basting it with any remaining marinade or a fresh glaze (if desired) two times during the cooking process. Continue cooking until the pork is cooked through (internal temperature of 145°F or 63°C) and has a slight char on the outside.

Once cooked, remove the char siu pork from the air fryer and let it rest on a cutting board for 5 minutes.

Slice the pork into desired serving pieces.

Serve the sliced char siu pork immediately with cooked rice and fresh vegetables, such as cucumber slices.
