Preheat your oven to 375°F. Line a baking sheet with parchment paper for easy cleanup.

In a medium mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat with an electric mixer until the mixture is smooth and creamy, about 2-3 minutes.

Unroll the can of crescent roll dough onto your prepared baking sheet. Separate the dough into 8 individual triangles.

Place about 1 tablespoon of the cheesecake filling onto the wide end of each crescent roll triangle.

Starting from the wide end, carefully roll up each crescent roll triangle, enclosing the filling. Pinch the seams and ends of the dough firmly to seal the filling inside and prevent it from leaking during baking.

Bake the cheesecake bites in the preheated oven for 12 to 15 minutes, or until they are golden brown and puffed up.

While the bites are baking, prepare the churro coating. In a shallow dish, combine the granulated sugar and ground cinnamon. In a separate small bowl, melt the unsalted butter.

Immediately after removing the churro cheesecake bites from the oven, brush each warm bite generously with the melted butter using a pastry brush. Then, roll each buttered bite in the cinnamon sugar mixture until fully coated.
