Preheat your oven to 375°F. Line a baking sheet with parchment paper.

In a large bowl, combine the chicken wings, 1 tablespoon of olive oil, 1/2 cup of aji amarillo paste, 1/4 cup of lime juice, 2 minced cloves of garlic, 1 tablespoon of cumin, 1 tablespoon of dried oregano, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Mix thoroughly until the chicken wings are fully coated with the marinade.

Arrange the marinated wings in a single layer on the prepared baking sheet. Bake for 20-25 minutes, or until they are golden brown and cooked through. (Alternatively, you can cook these in an air fryer according to your air fryer's instructions for chicken wings).

While the wings are baking, prepare the Aji Verde Sauce. In a blender or food processor, combine 1/4 cup of chopped cilantro, 1/4 cup of chopped red onion, 1/4 cup of chopped yellow or orange bell pepper, 2 cloves of garlic, 2 tablespoons of mayonnaise, 1 tablespoon of aji amarillo paste, 1 tablespoon of lime juice, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Blend until smooth, scraping down the sides as needed.

With the blender or food processor still running, slowly drizzle in 1 tablespoon of olive oil until the sauce is fully emulsified and achieves a creamy consistency.

Once the chicken wings are baked, transfer them to a clean bowl. Add a generous amount of the prepared Aji Verde sauce to the wings and toss until they are well coated.

Serve the Peruvian Aji Amarillo Chicken Wings immediately and enjoy!
