Prepare the spinach: Take 500 grams of spinach. Blanch the spinach in hot water for 2 minutes. Immediately transfer the blanched spinach to a bowl of ice-cold water to retain its vibrant green color. Squeeze out excess water from the spinach and place it in a blender jar.

Make the spinach paste: In the blender jar, add the spinach along with 10-12 garlic cloves, 2-3 green chilies, and a 1-inch piece of ginger. Blend all ingredients until a smooth paste is formed, without adding any water.

Cook the gravy: Heat 2 tablespoons of oil or ghee in a pan. Add 1 teaspoon of cumin seeds and 1/4 teaspoon of asafoetida. Let them splutter.

Add 1 medium chopped onion to the pan and sauté until golden brown. Add 1 medium chopped tomato and cook until soft and the oil starts to separate from the mixture.

Add 1/2 teaspoon of turmeric powder, 1 teaspoon of coriander powder, and 1/2 teaspoon of red chili powder. Mix well and cook for 1 minute.

Add the prepared spinach paste to the pan. Cook for 2-3 minutes, stirring occasionally.

Add 1/2 teaspoon of garam masala and salt to taste. Mix well.

Gently add 200 grams of paneer cubes and carefully mix to avoid breaking the paneer. Add 2 tablespoons of malai (cream) or fresh cream and mix into the gravy.

Cover the pan and let it simmer on low heat for 2 minutes.

Prepare the tempering: In a separate small pan, heat 1 tablespoon of butter. Add 6-7 finely chopped garlic cloves and sauté until golden brown.

Add 2 whole dried red chilies and 1/2 teaspoon of cumin seeds to the pan. Sauté for a few seconds until fragrant. Add a pinch of asafoetida and mix well.

Pour this prepared tempering directly over the palak paneer gravy in the main pan.

Serve hot Dhaba Style Lahsuni Palak Paneer.
