Preheat your oven to 425°F.

In a large bowl, toss the cubed sweet potatoes with 1 1/2 tablespoons of olive oil, 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, 1/2 teaspoon of paprika, and 1/2 teaspoon of roasted garlic seasoning until evenly coated.

Spread the seasoned sweet potatoes onto a baking sheet in a single layer. Roast for 25-30 minutes, flipping them halfway through, until they are tender and lightly browned.

While the sweet potatoes are roasting, brown the 1 pound of ground beef in a large skillet over medium heat.

Once the ground beef is cooked, drain any excess grease. Stir in the 1 packet of taco seasoning and prepare according to the package directions (usually involves adding a small amount of water and simmering).

In a separate large bowl, combine the 2 cups of corn, 1/2 cup of diced red onion, 1/4 cup of chopped cilantro, 1/2 cup of blended cottage cheese (or sour cream), 1/2 cup of mayonnaise, 2 tablespoons of cotija cheese, Tajín (to taste, start with 1 teaspoon), and elote seasoning (to taste, start with 1 teaspoon), and the juice of 1/2 lime. Mix until all ingredients are well combined. Taste the mixture and adjust the Tajín or elote seasoning as desired.

To assemble the bowls, layer the roasted sweet potatoes, seasoned taco meat, and a generous scoop of the prepared Mexican street corn mixture into individual serving bowls.

Garnish with extra cotija cheese, cilantro, and a squeeze of fresh lime if desired. Serve immediately and enjoy!
