Lightly grease a 9x13 inch baking dish with unsalted butter. Arrange the cubed challah bread evenly in the prepared dish.

In a large bowl, whisk together the beaten eggs, whole milk, heavy cream, granulated sugar, light brown sugar, orange zest, vanilla extract, ground cinnamon, ground nutmeg, and salt until well combined and the sugars have dissolved.

Pour the egg mixture evenly over the bread cubes in the baking dish, ensuring all the bread is well saturated. Gently press down on the bread to help it absorb the liquid. Cover the dish and refrigerate for at least 30 minutes, or preferably overnight, to allow the bread to fully soak up the custard.
