Heat the vegetable oil in a large non-stick pan or wok over medium-high heat until shimmering.

Carefully crack the eggs, one at a time, directly into the hot oil. Fry the eggs in batches if necessary to avoid overcrowding the pan. Allow them to cook for 1 to 2 minutes, or until the whites are mostly set and the edges are crispy.
