To prepare the lentils: Place the lentils in a pot. Add salt and water to cover the lentils. Bring the water to a boil and cook the lentils until tender.

To prepare the rice: In a separate pot, heat the oil. Add the vermicelli and stir continuously until golden brown. Add the rice and mix well to combine with the vermicelli and oil. Season with salt and add enough hot water to cover the rice mixture by about 1 cm. Cover the pot and cook over low heat until the rice is fully cooked and has absorbed the water.

To prepare the pasta: In another pot, boil water with a little salt and oil. Add the small pasta and spaghetti. Cook the pasta until 'al dente' (tender but firm to the bite). Drain the cooked pasta and set aside.

To prepare the sauce: Blend the tomatoes with water until smooth. In a pot, heat the oil. Add the minced garlic cloves and stir until fragrant. Pour the blended tomato mixture into the pot. Season with coriander, cumin, paprika, salt, and black pepper. Add a dash of vinegar. Let the sauce simmer gently until it thickens to the desired consistency.

To prepare the crispy onions: Slice the onion thinly. Heat oil for frying in a pan. Fry the onion slices until golden and crispy. Remove the crispy onions from the pan and place them on paper towels to absorb excess oil.

To assemble the Koshary: In a large serving bowl or individual dishes, layer the prepared ingredients. Start with a layer of cooked rice. Then a layer of cooked lentils. Add a layer of cooked pasta on top. Pour a generous amount of tomato sauce over all the layers. Garnish the dish with the crispy fried onions. Serve Koshary hot.
