Bring the mixture to a boil over medium heat, stirring continuously until all the sugar has completely dissolved. Reduce heat to low and keep warm.

Take each thick slice of Cuban bread and dip it into the warm milk mixture, ensuring both sides are fully saturated. Immediately transfer the milk-soaked bread slice into the whisked egg mixture, coating both sides evenly.

Carefully place the egg-coated bread slices into the hot oil. Fry for 2-3 minutes per side, or until they turn a beautiful golden brown. Work in batches to avoid overcrowding the pan.

Remove the fried torrejas from the pan and place them on a wire rack positioned over a baking sheet to drain any excess oil.

Once all the torrejas are fried and draining, pour the hot syrup evenly over them while they are still on the wire rack.

Serve the Authentic Cuban Torrejas immediately. Optionally, garnish with additional cinnamon sticks and star anise for presentation.
