Heat a large skillet or griddle over medium-low heat. Add the olive oil. Once shimmering, add the thinly sliced yellow onions and sprinkle with salt. Reduce the heat to medium. Place one slice of Texas toast into the pan. Spread a generous layer of white sauce onto the toast. Top with a spoonful of the caramelized onions. Carefully place a cheeseburger patty with melted cheese on top of the onions. Add another spoonful of caramelized onions on top of the cheeseburger patty. Place a second slice of Texas toast on top to complete the sandwich.

Press down gently on the sandwich with a spatula. Cook for 2-3 minutes, or until the bottom slice of Texas toast is golden brown and crispy. Carefully flip the entire sandwich and cook for another 2-3 minutes, or until the second side is also golden brown and crispy. Remove the finished Texas toast smash burger from the pan. Repeat with the remaining ingredients to make all four burgers.

Serve the Texas toast smash burgers immediately, optionally with a side of french fries and your favorite dipping sauce.
