Place the whole chicken into a large stockpot or Dutch oven. Ensure the chicken fits comfortably at the bottom of the pot.

Arrange the jujubes, dried longan, dried Chinese yam slices, ginger slices, and dried shiitake mushrooms around and on top of the chicken in the pot. Distribute them evenly.

Pour enough water into the pot to completely cover all the ingredients. The water level should be at least 1 inch above the top of the chicken and herbs.

Place the pot on the stove over high heat and bring the contents to a rolling boil. This should take approximately 10-15 minutes.

Once boiling, reduce the heat to low, cover the pot with a lid, and allow the soup to simmer gently for 1 hour and 45 minutes. The soup should maintain a gentle bubble, not a vigorous boil.

After 1 hour and 45 minutes of simmering, add the goji berries to the pot. Stir gently to submerge them in the broth.

Continue to simmer the soup for an additional 10 minutes to allow the goji berries to soften and release their flavor.

Carefully ladle the finished soup, including broth, pieces of chicken (which may have fallen off the bone), and the herbal ingredients, into individual serving bowls. The chicken should be very tender and easily shreddable.
