Ensure the frozen shrimp are fully thawed. Place the thawed shrimp in a bowl.

On a clean cutting board, finely dice the green chili peppers and red chili peppers.

Finely mince the thawed shrimp on the cutting board. You can chop it very finely with a knife or pulse it a few times in a food processor until it forms a coarse paste.
Transfer the minced shrimp to a large mixing bowl. Add the finely diced green and red chilies.

To the shrimp mixture, add the egg white, cornstarch, fish sauce, sesame oil, black pepper, and salt.

Using chopsticks or a spoon, thoroughly mix all the ingredients until they are well combined and form a cohesive, paste-like consistency. This may take a few minutes to ensure everything is evenly distributed.

Transfer the shrimp mixture into a clear plastic bag (like a freezer bag) or a piping bag. Snip off one corner of the bag to create an opening for piping, about 1/2 inch wide.

Place an air fryer parchment paper liner into the air fryer basket. Drizzle the olive oil evenly onto the liner.

Pipe the shrimp mixture from the bag onto the wooden skewers, shaping it into elongated forms around each skewer. Aim for approximately 1/2 inch thick and 4-5 inches long per skewer. You should be able to make about 12 skewers.

Carefully place the prepared shrimp skewers into the air fryer basket, ensuring they are in a single layer and not overcrowded. You may need to cook them in batches.

Air fry the skewers at 375°F until they are cooked through, golden brown, and slightly crispy, about 10-15 minutes. Flip them halfway through cooking for even browning.

Remove the cooked shrimp skewers from the air fryer and arrange them on a serving plate.

Sprinkle paprika over the cooked skewers for garnish.

Serve the shrimp skewers immediately, optionally with your favorite dipping sauces.
