In a large pot or Dutch oven, add the sliced smoked beef sausage and diced onion. Cook over medium heat, stirring occasionally, until the sausage is browned and the onion is softened, about 5-7 minutes.

To the pot, add the Tony's Cajun seasoning, Kinder's Wood Fire Garlic seasoning, onion powder, smoked paprika, and Trader Joe's sofrito seasoning. Stir well to combine with the sausage and onions, cooking for 1 minute until fragrant.

Add the chicken bouillon cube and water to the pot. Bring to a simmer, then stir in the orzo pasta. Ensure the orzo is submerged in the liquid.

Reduce the heat to low, cover the pot, and let it simmer for approximately 10 minutes, or until the orzo pasta is cooked al dente and most of the liquid has been absorbed. Stir occasionally to prevent sticking.

Stir in the halved grape tomatoes, heavy cream, and jumbo shrimp. Increase the heat slightly to medium-low and continue to cook, uncovered, for another 3-5 minutes, or until the shrimp are pink and cooked through.

Remove the pot from the heat and stir in the arugula until it wilts. Taste and adjust seasonings if necessary.
