Arrange the sourdough slices in a single layer on the prepared baking sheet. If your sourdough slices are large, you can cut them in half to create smaller, more manageable mini pizzas.

In a small bowl, combine the olive oil, dried oregano, dried basil, garlic powder, red pepper flakes (if using), salt, and black pepper. Mix well to create the herb topping mixture.

Spread about 1 tablespoon of pizza sauce evenly over each sourdough slice, leaving a small border for the crust. Sprinkle each with a generous amount of shredded mozzarella cheese.

Evenly sprinkle the herb topping mixture over the mozzarella cheese on each mini pizza. Finish by scattering the grated Parmesan cheese over the top.
