Begin by getting the 200g jasmine rice on to cook according to package directions. It will be ready just as the rest of the dish is finished.

In a small pot, whisk together the 400ml light coconut milk, 60g red curry paste, 60ml beef broth/stock, 1 tablespoon tamari, and 1 teaspoon sesame oil. Bring this mixture to a gentle simmer and let it cook for 5 minutes while you proceed with cooking the beef.

Heat a large pan over medium-high heat. Add the 500g extra lean beef mince and the 1 small finely diced brown onion to the hot pan. Brown the mince, breaking it up as you go, for approximately 5 minutes. Once the mince is browned, add the 3 minced garlic cloves and 1 tablespoon grated fresh ginger. Continue to cook for 1 more minute until the garlic and ginger are fragrant.

In a separate small bowl, mix the 1/4 cup tamari and 1 tablespoon SF maple syrup together. Pour this tamari and maple syrup mixture over the beef in the pan and allow it to bubble for 2 minutes, letting the flavors meld.

Stir the arrowroot slurry (1 tablespoon arrowroot mixed with 2 tablespoons cold water) into the beef mixture. Cook for 1 minute until the sauce becomes glossy and sticky. Finally, fold in the 80g baby spinach until it is just wilted.

To serve, portion the cooked jasmine rice into individual bowls. Ladle a generous amount of the coconut red curry broth over the rice. Place the sticky beef mixture on top. Finish by garnishing with thinly sliced Lebanese cucumber and sliced spring onions.
