Preheat your oven to 200°C (390°F).

Prepare the chicken by slicing the chicken breast into strips. In a bowl, season the chicken strips generously with salt, the dark spice blend (paprika or chili powder), and a drizzle of oil. Toss to ensure the chicken is evenly coated.

Prepare the vegetables by slicing the red bell pepper, yellow bell pepper, and red onion into strips.

To assemble each parcel, lay out a large piece of baking paper (approximately 40x40 cm) on a flat surface. Spoon 1/4 cup of uncooked white rice onto the center of the baking paper.

Add about 1/4 of the drained and rinsed kidney beans on top of the rice.

Arrange 1/4 of the sliced red and yellow bell peppers and red onion on top of the beans and rice.

Place 1/4 of the seasoned chicken strips on top of the vegetables.

Fold the baking paper securely around all the ingredients to create a sealed parcel. Bring the longer sides of the paper together and fold them down several times. Then, fold the ends inwards to create a tight seal, ensuring no steam can escape.

Place the prepared parcels onto a baking tray and transfer them to the preheated oven. Bake for 25-30 minutes, or until the chicken is cooked through and the rice is tender.

Carefully remove the parcels from the oven. Be cautious as steam will escape when opening.

Open each parcel and transfer the contents into a serving bowl. Squeeze fresh lime juice over the dish for added flavor. Garnish with fresh cilantro or parsley before serving.
