Prepare small aluminum tins (approximately 3-4 inches in diameter and 1.5-2 inches deep).

Take a portion of the cookie dough (about 1/4 to 1/3 cup per tin) and flatten it into a disc. Press this disc into the bottom of each aluminum tin, ensuring it covers the base evenly.

Spoon a generous amount of your chosen filling (Nutella, pistachio spread, or Biscoff spread) onto the center of the dough in each tin. Leave a small border around the edge.

Take another portion of cookie dough, flatten it into a disc slightly larger than the previous one, and carefully place it over the filling. Gently press the edges of the top and bottom dough layers together to seal the filling inside, ensuring no filling leaks out during baking.

Decorate the top of each cookie in the tin with your desired toppings, such as additional semi-sweet chocolate chips, crushed pistachios, or crushed Biscoff cookie pieces.

Place the filled cookie tins on a baking sheet and bake in the preheated oven for 18-22 minutes, or until the edges are golden brown and the centers are set but still slightly soft.

Once baked, carefully remove the cookie tins from the oven. Let them cool in the tins for a few minutes before serving.
