In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Whisk all the dry ingredients together thoroughly until well combined.

Transfer the prepared homemade pancake mix to an airtight container or jar for storage. Label the container with instructions for making pancakes (see Step 3).

To make pancakes: In a separate mixing bowl, combine 1 cup of the homemade pancake mix with 3/4 cup of milk, 1 egg, and 1 tablespoon of vegetable oil. Whisk until just combined. If the batter is too thick, add up to an additional 1/4 cup of milk until it reaches your desired consistency.

Heat a griddle or large non-stick skillet over medium heat. Lightly grease with butter or cooking spray.

Pour about 1/4 cup of batter per pancake onto the hot griddle. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip only once.

Serve pancakes immediately with your favorite toppings.
