Combine 1 cup of water, granulated sugar, and thinly sliced fresh ginger in a small saucepan. Bring the mixture to a gentle simmer over medium heat, stirring occasionally until the sugar is completely dissolved.

Reduce the heat to low and let the syrup simmer for 5 to 7 minutes to allow the ginger flavor to infuse. Remove the saucepan from the heat and let the syrup cool completely to room temperature.

Once cooled, strain the ginger slices from the syrup using a fine-mesh sieve. Discard the ginger. Stir in the fresh lemon juice into the strained syrup. This is your lemon ginger concentrate.

To assemble each drink, place 2 tablespoons of mango star boba into the bottom of each of your four serving glasses.

Fill each glass with ice cubes, as needed, leaving enough space for the liquids.

Pour 1/4 cup of the prepared lemon ginger concentrate into each glass. Adjust the amount to your preferred sweetness and tartness.

Top each glass with 1 cup of chilled sparkling water. Stir gently with a long spoon to combine the ingredients without losing too much fizz.

Garnish each serving with a fresh lemon slice on the rim or floating in the drink. Serve immediately and enjoy!
