In a large non-reactive bowl or rectangular glass container, combine the minced garlic, freshly ground black pepper, packed brown sugar, soy sauce, lemon-lime soda, banana ketchup, and oyster sauce. Whisk until well combined and the sugar is dissolved.

Add the cut pork pieces to the marinade, ensuring all pieces are fully coated. Cover the container and refrigerate for at least 4 hours, or preferably overnight (up to 12 hours), to allow the flavors to meld and tenderize the pork.

Once the pork is marinated, thread the pork pieces onto the soaked bamboo skewers. Try to arrange the pieces relatively flat and evenly spaced on each skewer. Do not overcrowd the skewers.
