In a large pot or Dutch oven, brown the ground beef over medium heat. Break up the meat with a spoon as it cooks.

Once the ground beef is fully cooked, drain any excess grease from the pot.

Add the diced jalapeños, diced red bell pepper, 1/4 cup chopped green onions, and 1/4 cup chopped fresh cilantro to the pot with the ground beef. Cook for 3-5 minutes, stirring occasionally, until the vegetables begin to soften.

Season generously with garlic powder, onion powder, Kinder's Tequila Lime seasoning, and paprika. Stir well to combine.

Pour in the can of evaporated milk and the undrained can of Ro-Tel Original Diced Tomatoes & Green Chilies. Place the softened block of cream cheese into the mixture. Cover the pot and allow it to heat for about 3-5 minutes, letting the cream cheese soften further.

Uncover the pot and stir the cream cheese into the mixture until it is well combined and smooth.

Add the cubed Velveeta, shredded Pepper Jack cheese, and shredded sharp cheddar cheese to the pot. Reduce the heat to low.

Continuously stir the mixture over low heat until all the cheeses are completely melted and the dip is smooth, creamy, and thoroughly combined. This may take 8-10 minutes.

Serve the hot Rotel dip immediately over a bed of Doritos Spicy Nacho flavored tortilla chips to create delicious nachos. Garnish with additional chopped green onions and cilantro, if desired.
