In a large bowl, combine the chicken breast mince, 3 minced garlic cloves, 1 heaped tablespoon lemongrass paste, 1 grated carrot, 1 tablespoon fish sauce, 2 teaspoons soy sauce, 1/2 tablespoon coconut sugar, 1/2 cup finely chopped spring onions, 1/3 cup chopped coriander leaves, and 1/4 teaspoon white pepper. Mix until just combined, being careful not to overmix.

Roll the chicken mixture into large golf ball-sized meatballs or patties.

Preheat your air fryer to 190°C. Lightly spray the meatballs with oil. Place them in a single layer in the air fryer basket, ensuring not to overcrowd it.

Cook the meatballs for 10-12 minutes, flipping them at the 8-minute mark, until they are golden brown and cooked through.

While the meatballs are cooking, prepare the dressing. In a bowl, combine 1/4 cup hot water, 1 teaspoon finely chopped coriander stems, 2 tablespoons fish sauce, 2 tablespoons lime juice, 2 teaspoons rice wine vinegar, 1 tablespoon coconut sugar, 2 finely minced garlic cloves, and 1/2 deseeded and finely chopped long red chili. Mix until the sugar is dissolved.

Prepare the serving components: steam 4 cups of jasmine rice, slice 1 cucumber and 1 carrot into matchsticks, pick 1/2 cup each of fresh mint and coriander leaves, and fry 4 eggs to your liking.

To assemble the bowls, place the steamed rice at the bottom. Arrange the cooked meatballs on top of the rice. Add the prepared cucumber and carrot matchsticks and fresh herbs. Top each bowl with a fried egg.

Drizzle generously with the prepared dressing and serve immediately.
