Wash the sweet sticky rice under cold running water until the water runs completely clear. This removes excess starch and prevents the rice from becoming too gummy.

Place the washed rice in a bowl and cover it with fresh water. Allow the rice to soak for at least 4 hours, or preferably overnight, to ensure it cooks evenly and becomes tender.

Drain the soaked rice thoroughly. Transfer the rice to a steamer basket lined with cheesecloth or a banana leaf. Steam the rice for 20 minutes, or until it is tender and translucent.

While the rice is steaming, prepare the coconut milk mixture. In a medium pot, combine the coconut milk, sugar, and salt. Heat the mixture over medium heat, stirring constantly, until the sugar has completely dissolved. Do not bring to a boil.

Once the rice is steamed, immediately add it to the warm coconut milk mixture in the pot. Stir gently until the rice is fully combined and every grain is coated with the sweet coconut sauce.

Cover the pot with a lid and let the sticky rice sit undisturbed for 10 minutes. This allows the rice to fully absorb the coconut milk and become rich and flavorful.

While the rice is absorbing, peel the ripe mango. Carefully slice the mango flesh away from the pit, then cut it into desired serving pieces.

Serve the warm mango sticky rice on individual plates. Arrange the fresh mango slices alongside the rice. Garnish with a sprinkle of sesame seeds for added texture and flavor.
