Heat 2 tablespoons of oil in a large pan or pot over medium heat.

Add 1 teaspoon of cumin seeds to the hot oil and let them splutter.

Add 1/2 teaspoon of asafoetida and sauté for 30 seconds until fragrant.

Add 1 cup of chopped tomatoes to the pan.

Stir in 1/2 teaspoon of turmeric powder, 1 teaspoon of coriander powder, 1/2 teaspoon of red chilli powder, and 1 teaspoon of salt.

Mix all ingredients well and cook the tomato mixture, stirring occasionally, until the oil separates from the mixture, about 5-7 minutes.

Add 3 cups of boiled and cubed potatoes to the pan.

Mix well to combine the potatoes with the spices and tomato masala.

Pour in 2 cups of water and bring the mixture to a boil.

Reduce the heat to low, cover the pan, and simmer for 5 minutes to allow the flavors to meld.

Stir in 1/2 teaspoon of garam masala.

Add 2 tablespoons of chopped fresh coriander and mix thoroughly.

Serve the Rase Waale Aloo Tamatar Ki Subji hot with roti, naan, or rice.
