Prepare the salsa: In a medium bowl, combine the chopped tomatoes, 1/2 red onion, cilantro, juice of 1/2 lime, and 1/2 teaspoon salt. Mix well and set aside.

Prepare the guacamole: In another medium bowl, mash the ripe avocados. Stir in the finely chopped 1/2 red onion, juice of 1/2 lime, cilantro, and 1/2 teaspoon salt until combined.

Prepare the queso: In a large saucepan over medium heat, melt the 2 tablespoons of butter. Add the 2 tablespoons of flour and stir constantly for 1 minute until a smooth roux forms.

Slowly whisk in the 2 cups of heavy cream, continuing to whisk until the mixture is smooth and begins to gently bubble. Reduce the heat to low.

Add the grated cheddar, Oaxaca, and Monterey Jack cheeses to the saucepan, along with the 1/2 teaspoon black pepper, 1/2 teaspoon salt, 1 teaspoon paprika, and 1/2 teaspoon cumin. Stir continuously until all the cheese is fully melted and the queso is creamy.

Preheat your broiler to high. Line a large baking sheet with parchment paper.

Pour the prepared queso onto the lined baking sheet. Evenly top with the cooked taco meat and the 4 ounces of shredded Monterey Jack and 4 ounces of shredded cheddar cheeses.

Broil for 3-5 minutes, or until the cheese is bubbly and golden brown. Watch carefully to prevent burning.

While the queso mixture is broiling, spread tortilla chips onto another large baking sheet.

Carefully remove the hot meat and cheese mixture from the broiler. Pour and spread it evenly over the tortilla chips.

Finish the nachos by generously topping with the prepared salsa, guacamole, sour cream, and sliced green onions. Serve immediately.
